Easy Vanilla Extract

Most all of us use vanilla extract, and the real stuff can get kind of expensive. I found this
really simple recipe in a cooking magazine a few months ago and have really enjoyed
it!

Homemade Vanilla Extract

Ingredients:
1 vanilla bean, sliced lengthwise
2 cups vodka*

Directions:
Pour vodka into a glass container with a lid. Scrape the vanilla seeds
from the bean into the vodka, and then stuff the vanilla bean into the
container with the vodka as well. Shake well. Allow the vanilla bean and
seeds to steep in the vodka for 1 week or up to 1 month to develop
the extract. Either remove or leave in the vanilla bean, depending on
your preference.

*Vodka is used because it lacks odor and flavor that would compete with
the vanilla flavor.
